Reflections on Creme Brûlée. WHAT DA HELL DO WE DO!?
So we finished making Creme Brûlées exactly one week ago. Since then people have been coming in every single day asking for them...constantly 😅 We have never sold that many Creme Brûlées (or in fact, of any other flavor....) in the 12 years that Moustache has been open. It was hectic as
It was so in demand we couldn't make enough. Which meant some inevitably missed out & were annoyed at us. I don't think people realize how labour intensive it is to bring our products to you. Which brings me to ask the question, what do we do about this flavor? Historically, we only run our Limited Edition flavors for 2/3 weeks & never more than once per year. But what do we do about Creme Brûlée? What do you want us to do?
Some things to consider:
1) Our special flavors usually require a lot more cost (double the labour & usually much higher ingredients cost) just to make them.
Therefore if we were to make more, we'd need to get more help. So if we do it, I'll either need to make a commitment to a) either hire another full time baker (let me know if you know any looking 👀) OR b) invest in better equipment to more efficiently help the staff make them (please note the commercial equipment needed will cost close to $60,000 😬 so a decision small businesses can't take lightly). However this equipment would also be able to make gelato so was thinking POTENTIALLY we could make Moustache cookie ice cream in the summer!?
2) will people tire of the Creme Brûlée? Does it have legs to stand on to be around either in a semi-permanent or more long term capacity? I personally think it is an absolutey amazing and exceptionally delicious product that it does. But I'm not you guys & you guys are the ones that matter. Did you manage to try the Creme Brûlée? And if so, do you think it's a product that could have longevity as opposed to just a flash in the pan? One that you don't really tire of? Would you like it to be more permanent or do you think having it once a year is enough?
Anyway I'm babbling now. Just something to think about. Running a business is a lot of risk taking - so preferably we take educated guesses with a lil bit of feedback and data 😆 Any thoughts, just holla at me. I'd love to hear your feedback!
